Isn't Chicken Just Chicken?

No way is chicken - just chicken!

Chicken is perhaps the scariest part of the food industry for us. There is so much misinformation out there and the cost, unlike any other food group, runs a huge gamut. But the most amazing thing we hear from our clients is “Our “chicken…….ready…..wait for it….. tastes like chicken! That’s right and we know exactly what they mean.

Our plain chicken is our #1 seller. Store bought tasteless chicken is a result of factory farms raising chickens unnaturally fast, plumping them up with chemical cocktails and seriously genetically modified feed. We also can smell that chicken a mile away. Chicken, like all raw foods, should really be odorless. We can’t tell you how many clients recount the rotten chicken story even from the best retailers. Can’t happen with Eat-Well Consultants as our chicken is fresh flash frozen usually within hours of harvest.

Freebird chicken is the best chicken we have seen in 25 years. And we have seen some good chicken. Nothing comes close to the taste, texture, and quality of our chicken. One taste you will be a convert.

Our chicken cooks up in minutes from frozen and tastes amazing with a little kosher salt and white pepper. The trick is cooking only until juices run clear. We know internal temperature of 165 degrees (thanks, USDA) but really just when the pink is gone and juices are clear. We cook our cutlets from frozen in about 4-5 minutes total depending on heat source.

Our All-Natural and Antibiotic-free chicken are essentially the same chicken and the same specifications; however, this is not prevalent in the industry where All-Natural is a broad term and Antibiotic-free is a very specific term, neither regulated by a certification board. In our case, it is the higher standards Freebird Antibiotic-free Farms employ that make both designations interchangeable. There is a small amount of water retained in both All-Natural and Antibiotic-free but no chemicals, like sodium tripolyphosphate or TPP, for actual water absorption, adding sometimes 10% more weight and of course this inorganic chemical compound. Ugh!

Organic, on the other hand, is a legal designation and regulated by the USDA. National Organic Program (NOP) defines organic as follows:

“Organic meat, poultry, eggs, and dairy products come from animals that are given no antibiotics or growth hormones. Organic food is produced without using most conventional pesticides; fertilizers made with synthetic ingredients or sewage sludge; bioengineering; or ionizing radiation.”

Keep in mind hormone use to raise chickens is illegal in the United States and throughout much of the world. Because every aspect of the process from egg to table is regulated there is a hefty price tag on organic products. The farmer’s expense is real. They need more land for fewer yields. The water needs filtration and testing and the feed is very expensive, along with dozens of other compliance issues. Costs should come down as demand increases and the sector becomes more profitable for all farmers even the big producers.
